Vegan – Casserole with vegetables and beans

A delicious casserole that does not require any meat. If you like, you can of course also take ready-made beans from the can.

Preparation

  1. Peel the potatoes and slice them into fine slices and fry in oil.
  2. Cook the beans with a bay leaf. The liquid should be just enough to cover the beans. If necessary, add a little water.
  3. Cut vegetables into small pieces and fry them in oil.
  4. Deglaze with vegetable broth and white wine and cook the vegetables. Season with salt and pepper.
  5. Add beans and puree everything. the consistency should be medium-viscosity.
  6. Preheat the oven to 180°C.
  7. Pour vegetables into the baking dish and spread the potatoes on top.
  8. Bake in the oven for about 30 minutes.

  • 300 g potatoes
  • 200 g pre-cooked brown beans
  • 1 onion
  • 2 ripe tomatoes
  • 1 clove garlic
  • 2 tbsp white wine
  • 200 ml vegetable stock
  • Salt
  • Pepper
  • Oil
