Taquitos filled with chicken and black beans

There is a very tasty Mexican appetizer. The preparation is quite simple and quick. For the vegetarian version, omit chicken and replace with tofu. I recommend a tomato salsa and guacamole.

Preparation

  1. Cut the chicken into small cubes and fry in vegetable oil.
  2. Drain the can of black beans.
  3. Cut the spring onion into rolls. We need the white beginnings for the filling and the green ends for the side dish.
  4. Add the green ends to the chicken and fry with it.
  5. Season the chicken meat with the spices.
  6. Cover the wheat tortillas with the chicken filling and roll. Then bake them in the oven.
  7. Wash the salads and serve with the taquitos.

Filling

  • 500 g chicken fillet
  • 2 tbsp vegetable oil
  • 1 can of black beans
  • 4-5 spring onions
  • 1 tsp dry garlic
  • 1 tbsp herbs of Provence
