Juicy chicken from the oven

Enjoy a juicy chicken straight from the oven. If you like, you can add rice and salad.


  1. Preheat the oven to 200°C.
  2. For the bread filling, cut the old bread into small cubes, add the toasted liver slice, the roasted onion, garlic, stir in the egg and the wine to moisten the bread, season and mix well.
  3. Prepare the spice mixture, sprinkle salt and spices in a bowl and mix.
  4. Fill the abdominal cavity with filling and chicken in an oven-proof mold and sprinkle the entire surface with the salty spice mixture and add the thyme.
  5. Fill with water up to more than half of the chicken.
  6. Bake crispy and check from time to time if the meat is cooked.

  • 2.5 kg whole chicken
  • 3-4 tsp salt
  • 3 sprigs of thyme
  • 1 tsp grated nutmeg
  • 6 leaves of dried or fresh sage


  • 3-4 slices of bread
  • 1 egg
  • 2 tbsp white wine
  • 1 roasted onions
  • 4 cloves garlic
  • roasted chicken liver
