Fennel Orange Salad with Walnuts

A fresh salad with great ingredients that go well together and refresh.


  1. Preheat the oven to 180 °C.
  2. Cut fennel lengthwise into thin slices, place on a baking tray and drizzle with oil and a little salt. The fennel should bake for 10 minutes until it is slightly soft.
  3. Mix honey and lemon juice and drizzle over the fennel for another 10 minutes. bake and let cool.
  4. In the meantime, cut the oranges on a plate and collect all the juice.
  5. Arrange with baked fennel and red onion rings on a serving plate.
  6. Mix the orange juice with the fennel roast juice and season with salt if necessary.
  7. Spread the mixture evenly on the salad and sprinkle with pepper, dill, and walnuts just before serving.

  • 1 red onion
  • 1 tbsp liquid honey
  • Juice of 1 lemon
  • A handful of dill
  • Salt
  • 3 tbsp olive oil
  • Walnuts
