Chicken curry with noodles and mushrooms

Thai cuisine is so delicious and that’s why today there is a fantastic recipe. It’s super easy to prepare. Anyone can cook it.

Preparation

  1. Put the chicken fillet in a saucepan with chicken broth and simmer for about 8 minutes until the chicken meat is almost cooked. Place the chicken fillet on the plate and cut into slices.
  2. Cook the pasta according to the package instructions and set aside.
  3. Heat some oil in a saucepan and sauté the onion, garlic and ginger.
  4. Add the curry paste and 100 ml of coconut milk and simmer for a few minutes.
  5. Add the mushrooms and stir in the mixture.
  6. Stir in peanut butter and turmeric and add the remaining coconut milk and chicken broth. Simmer for a few minutes.
  7. Add sliced chicken fillet, fish sauce, some soy sauce and lime juice and cook again.
  8. Serve chicken curry in deep bowls with noodles and sprinkle with coriander, chopped peanuts and chili.

Ingredients

  • 1 L chicken broth
  • 400 g chicken breast
  • 400 ml coconut milk
  • 1 finely chopped onion
  • 1 tbsp fresh ginger grated
  • 2 chopped cloves of garlic
  • 300 g mushrooms in slices
  • 3 tbsp peanut butter
  • 1 tsp turmeric
  • 2 tbsp red curry paste
  • 1 tbsp soy sauce
  • 2 tbsp fish sauce
  • 1 pressed lime + 1 lime to serve
  • 3 tbsp fresh coriander
  • 1 tsp sesame oil
  • 2 packs of egg noodles or ramen noodles
  • Chili Flakes
  • chopped peanuts
